You can also treat it like a brine and let meat like poultry soak in it, salt and pepper for a few hours before baking, grilling, frying, roasting or — every hunter's favorite — smoking it.

Jag föredrar helt klart rimmning. Rimmning är nästan magiskt. Kan få vilken annars torr, mager köttbit som helst att bli saftig.

Faktum är att jag har en bit älghögrev i frysen som jag har lite ångest över. Känner inte för det klassiska långkoket nu under denna årstid. Kanske går lite vild and crazy, rimmar och skaver den för att göra fräscha wraps eller något på biten.
